Maple syrup making is common in the winter forests of the the Northeast and upper Midwest; the Southeas, however, has its own version of maple syrup using sycamore sap. Learn how to properly identify sycamore trees, how to tap then, and make a sweet syrup from their sap. Be prepared to spend the majority of the program outside and hiking to find some good sycamore trees, so dress accordingly. A fire will be going for condensing the syrup and for warmth.
